We are all about fresh, organic, and healthy ingredients and our green curry paste it just that!

This recipe is designed to deliver and easy, healthy, and fresh green curry paste that you could NEVER get out of a can. Additionally this recipe is designed for those who can't always access an asian market for uncommon ingredients such as galangal or kaffir leaf leaves.

This recipe is super easy, takes 10 minutes and only requires a blender or food processor.

Our base for our green curry is lemongrass (or lemon zest), serrano chilies, ginger, green onions, shallot, green bell pepper, garlic. To get an authentic flavor and added health value, we add cumin seeds, coriander, fresh turmeric, lime and lime zest, olive oil and maple syrup. If your missing an ingredient or two - try your best to find a close substitute you have on hand. Remember the best thing about homemade green curry paste is you can customize it to your taste buds! If you enjoy heat add more chilies, if you like garlic feel free to add more! We like to think of cooking as a palette - cook your way and don't be defined by a recipe.

Ingredients:

1/2 tsp whole coriander seed

1 1/2 tsp of cumin seed

3/4 tsp of black peppercorns

3 serrano chiles (most seeds removed)

1.5 inch piece of ginger (peeled - lightly chopped)

2 stalks of lemongrass (trimmed and chopped) (if unavailable use zest from 1 organic lemon)

6 cloves of garlic, peeled

1 large green bell pepper (stem and seeds removed - chopped)

3 stalks of green onions

1/4 cup of diced shallot

1 inch piece of turmeric (peeled - lightly chopped)

1 medium lime, zested and lime juice (should yield 3-4 Tbsp , if not another lime is needed)

1/2 tsp of salt

3 TBSP of olive oil (organic - cold pressed is best)

Instructions:

  1. Toast coriander, cumin seeds and black peppercorns for 4 minutes over low heat until aromatic, shake occasionally and be careful to not burn the spices.

  2. Crush toasted spices in mortar to pestle to bring out the flavor of these spices.

  3. Add lemongrass (or lemon zest), Serrano chilies, bell pepper , ginger, garlic, turmeric, toasted spices (coriander, cumin, black peppercorns) sea salt, lime, lime zest, shallot, green onions, olive oil, and maple syrup to blender or food processor. Blend until paste forms

  4. Taste and adjust flavor as needed

  5. Store curry paste in jar with lid and place in refrigerator for up to 10 days (can be frozen but for fresh flavor I wouldn't suggest this)

  6. Curry paste is ideal for many recipes! Enjoy this easy to make, fresh, and nutritious recipe!
